Erin and I creatively agree on almost everything. Almost.

HG has been making Rabbit Plates since she was three, and somewhere along the way, I started making them too. They are a little fresh, a little salty, a little crunchy, and usually exactly what I want to eat in the middle of a busy day.

This one is bright with lemon, salty from the Parmesan, a little spicy from the red pepper flakes, and finished with buttery garlic breadcrumbs for crunch. It feels like more than the effort it takes, which is exactly what I want when I’m only cooking for myself.
